Quality Evaluation of Some Selected Commercially Imported Honey Available in Libyan Markets

Participants: • Prof. Mahasen Al-Khabbat • Eng. Huda Al-Jilani • Eng. Hanan Misbah Study Summary: Ten samples of commercially imported honey were evaluated based on the following parameters: • Moisture content • Color grade • Ash content • pH level • Hydroxymethylfurfural (HMF) content The results showed that most of the samples exceeded the permissible limits of HMF according to Libyan and international standards. This indicates a deterioration in honey quality, possibly due to improper storage or aging.
